I’m sharing my tortilla pizza for two because sometimes you just want a slice of pizza, right? Here’s the deal, it’s easy to stock small jars of pizza sauce or make your own homemade sauce. It’s all about convenience for me, I store about 12 jars that are 14 ounces each.

You could also thin some tomato paste with a little water and add some Italian Seasoning with some Garlic Powder instead of buying the pizza sauce jars at the store.

Please stock Mozzarella shredded cheese, I freeze it and remove what I need when a recipe calls for it. It’s great for pizza, lasagna, and so many casseroles. Then you have it available when you need it.

Place two flour tortillas on your cookie sheet and brush them with olive oil. Flip the tortillas over and brush the other side with olive oil.

Remove the cookie sheet from the oven and spread the desired amount of pizza sauce on one side of the tortillas. You decide the amount, you can use a little or a lot.

Sprinkle the desired amount of Mozzarella cheese on each pizza. Add chopped onions, pepperoni, and black olives. Bake for 5 minutes or until the cheese has melted. Use a pizza cutter to cut your pizza slices.

  1. Much fancier version of the bachelor pizzas I still make occasionally to this day. I use Ragu pasta sauce, American cheese and whatever bread product I have laying around – English muffins, bagels, even just white bread in a pinch. Toast the bread product, cover with pasta sauce, cover that with American cheese, then put a thin smear of pasta sauce on the cheese to prevent burning. Broil until cheese is melty. Easy way to use up leftovers and still kind of tasty.

    But I’ll definitely try your version at some point too. Thanks!

    We make these at our house too! The grandkids like to make their own, and I get the toppings out and they have at it. We also like to use English muffins for the crust. So good and easy.

  3. I love these! I sometimes make a few pizza crusts for the freezer as well as tortillas and assorted prepped ingredients ready to assemble in a variety of ways. Bell peppers freeze easily and don’t get too soggy when thawed, and I almost always have frozen cubed ham or cooked ground beef in resealable freezer bags ready to use. I don’t usually bother shredding cheese, I just freeze it in smaller portions and when it thaws out it’s easy to crumble as needed. Not quite the same but a heck of a lot easier and it will melt down nicely if you crumble it small enough. Shopping the freezer for quick last minute meal inspirations is easy.
