I love Mexican Pizza. Actually, I love everything Mexican. We make this recipe quite often because we always have a little ground beef leftover, and tortillas are a staple in our home.
Mexican Pizza has a layer of refried beans, seasoned ground beef, shredded cheese, and enchilada sauce in a crispy flour tortilla! In case you missed this post, Taco Salad Recipe.
This recipe calls for refried beans and I used pinto refried beans. I’m sure black bean refried beans would be delicious as well. As far as the shredded cheese variety to use, any cheese will work, in my opinion. The most popular cheeses to use are cheddar, spicy jack, and Mozzarella, so you can mix and match with whatever you have in the house.
I freeze shredded cheese and then I thaw it in the refrigerator when it’s time to use it. If I freeze blocks of cheese they tend to crumble when I try to slice or grate the cheese, so I haven’t done that for years. You can freeze shredded Mozzarella, shredded cheddar, shredded Mexican blend, and shredded parmesan.
Having cheese in my freezer keeps me out of the store, the fewer the grocery trips, the more I save.
Items You May Need In The Kitchen
As always I love to gather the ingredients.
Preheat your oven to (375°F ) = (190°C) Grab a frying pan and brown the ground beef along with cooking the chopped onions. Drain the grease. Sprinkle the taco seasoning and water over the meat mixture and stir to make sure the seasoning is well mixed throughout.
Bring it to a boil, and then turn down the heat and simmer the mixture for about ten minutes. Add the green chilies, if desired.
Heat a griddle and lightly brown the flour tortillas on each side. Place two on a greased cookie sheet. I used two half-sheet cookie sheets to make the four Mexican pizzas.
Warm up the refried beans in a microwave bowl to make the refried beans easier to spread onto the tortillas. Layer One: Spread 1/4 of the refried beans onto each of the four bottom tortillas.
Layer Two: Scoop 1/4 of the meat and onion mixture onto the layer of the refried beans. As shown, sometimes in this step I’ll spread a few of the sliced olives on top of the meat mixture.
Layer Three: Place the “top” tortilla onto the meat mixture. Spread 1/4 of the red enchilada sauce onto each of the “top” tortillas.
Layer Four: Sprinkle the shredded cheese over all four “top” tortillas. Sprinkle some chopped tomatoes, green onions, and black sliced olives on top.
Bake in the oven for 5-10 minutes or until the cheese is sizzling. Serve when they cool enough to handle. Garnish with salsa, cilantro, Jalapeño peppers, and sour cream. Enjoy. Is your mouth watering, yet? These are so good!

- 1 cup shredded Mozarella cheese
- 1-2 Roma tomatoes or cherry tomatoes, chopped
- 2-3 green onions, chopped
- 1-2 small cans of sliced olives
- Garnish with salsa, cilantro, Jalapeño peppers, and sour cream.

How do I store the leftovers?
I store them in the fridge on a plate covered with plastic wrap for 1-2 days maximum because they will become soggy if left in the fridge too long.
How can I reheat these?
If you have an air fryer, those would work great! You can also reheat them in the oven. I wouldn’t microwave them because they may be too rubbery. But I don’t like regular pizza reheated in the microwave, that’s how I roll. Often, Mark will use the microwave to reheat his pizza, then use a fork to eat it.
Can I freeze these after baking?
I wouldn’t recommend it because they may become soggy after thawing them. You can give it a try and see how it works for you.
Can I fry the flour tortillas in oil?
You can, in fact, they would taste so good that way! But, I was trying to cut down a little on the calories.
What can I serve with these Mexican Pizzas?
- Tossed green salad

- Grilled vegetables
- Chips and salsa
Can I use corn tortillas instead of flour?
I have a problem with corn tortillas falling apart when I make this recipe. It may be the tortillas I can buy where I live. So I stick with flour variety. Be adventurous and try the corn tortillas to see how it works out for you. Nothing ventured, nothing gained.
Can I use Gluten-Free tortillas?
Yes, you can, I love that I can find them in my city now!
Can I make these vegetarian?
Yes, you can, just skip the ground beef. You can try all kinds of veggies on pizza, add the ones your family likes.
Are there other meats I should try?
As you well know, many Mexican foods include a wide variety of meats, including chicken, bacon, ham, and more. I used my ground beef today since I had it in the freezer, but you can change things up and try different meat on yours.

Aloha Linda, This looks delicious! I love Mexican food!!! Are the refried beans made from scratch or are they from the can? I’ve never made them from scratch but I’d be willing to bet you have a killer recipe for homemade refried beans. You mentioned medium-sized flour tortillas. Approximately what would the diameter of that be? I’ve only seen the taco and burrito size tortillas in my grocery store. Judging by the pictures, they look like they’re approximately 10” in diameter which would make it the burrito-sized tortilla. This probably seems like a trivial question but skimping on the filling or putting too much of the filling on the tortillas would change the outcome of the pizza. When I worked at a place that makes taco pizza’s they would mix the refried beans in with Salsa, It spreads
so much easier. This is like the Taco Bell ones so no lettuce right? I was wondering about that.
