Food Storage Moms-Meals in a Jar for Breakfast

Food Storage Moms and many other groups have done the meals in a jar for breakfast, lunches, salads, dinners, etc. Today I wanted to throw together some “Breakfasts in a Jar”. The quart jars are filled with freeze dried  veggies and OvaEasy eggs to make in a 9 X 9 inch (greased) frittata, quiche/egg dish. These are designed to eat within one week. I will be showing our readers how to use “oxygenators” soon to extend the shelf life of these meals in a  jar. I have dinners in a jar coming soon!  Easy! Simple! Saves time and money!

Ingredients for quarts: (any amount you choose-no cookbook required)

1. Cauliflower, green bell peppers, mushrooms, 1/2 package OvaEasy eggs and cheese. Add approx. 1- 1/2 cups water, stir and bake at 350 degrees for 20-30 minutes. Salt and pepper to taste. This one I cook outside in my Solar SunOven International Oven. Yes, no smell in the house! I try to bake everything in my SunOven to save on energy costs and to keep my house cool.

2. Diced potatoes, freeze dried pre-cooked sausage, onions, green onions, 1/2 package OvaEasy eggs and cheese. Add approx. 1-1/2 cups water, stir and bake at 350 degrees for 20-30 minutes. Salt and pepper to taste.

3. Asparagus, mushrooms, onions, 1/2 package OvaEasy eggs and cheese. Add approx. 1-1/2 cups water, stir and bake at 350 degrees for 20-30-minutes. Salt and pepper to taste.

4. Diced potatoes, spinach, onions, 1/2 package OvaEasy eggs and cheese. Add approx. 1-1/2 cups water, stir and bake at 350 degrees for 20-30 minutes. Salt and pepper to taste.

5. Diced potatoes, asparagus, onions, 1/2 package OvaEasy eggs and cheese. Add approx. 1-1/2 cups water, stir and bake at 350 degrees for 20-30 minutes. Salt and pepper to taste.

What I like about making my own “pre-packaged” breakfast  is the fact that I can choose the amounts of veggies, cheese, sausage, etc. When you choose the “breakfast” you want for the morning you pour the dry ingredients into a bowl whisk with water and pour into a greased pan of your choice and bake. Easy and delicious!

*Note-if you do not have OvaEasy eggs, just substitute the 1/2 package with 6 regular eggs and add only 1/2 cup water.

*Oatmeal in a Jar Breakfast-make them on Saturday for the entire week**

Here are some pint jar ideas for a breakfast on the run, take it to work, or read the newspaper with a bowl of oatmeal morning:

1. Steel cut oats, freeze dried bananas, brown sugar, cinnamon: add 1- 1/2 cups boiling water-screw on lid and ring -wait 15minutes.

2. Steel cuts oats, freeze dried apples, cinnamon and brown sugar: add 1-1/2 cups boiling water-screw on lid and ring-wait 15 minutes.

3. Steel cuts oats, raisins, cinnamon, brown sugar: add 1-1/2 cups boiling water-screw on lid and ring-wait 15 minutes.

I like “cooking” my oatmeal like this because I no longer have a bowl of oatmeal boil over in the microwave! What a mess! Yes, the lid needs a little help getting off because it starts to “seal”.  No worries, remove with a can opener…I reuse them time after time.  Serve your oatmeal in a bowl, add a little milk, enjoy!

I hope these “Breakfasts in a Jar” help you save money by eating a healthier breakfast using your food storage! Just think of the time and  money you will save by not eating out or buying pre-made packages! Gotta love that food storage……. Honeyville Freeze Dried Fruit

What an all around fabulous idea – environmentally and nutritionally sound and sensible, practical, convenient and delicious. It’s fun and clever too! What most can you ask?

Curious about how much oatmeal to add…..I can guess the sugar, fruit and spices but the oatmeal I was not sure about. How much for one pint jar?

I filled the pint jars less than half full because I needed room to fill with yummy extras. I would say approximately 3/4 cup. I love “cooking” oatmeal this way! Linda
