  1. Linda,
We always have leftover chicken to make meals with these recipes. Except our leftover chicken is not really “leftover.” We buy several rotisserie chickens at a time from Sam’s Club . Pat debones the chickens and I seal meal sized packages with my Foodsaver vacuum sealer and toss them in the freezer. Any time we need an easy meal we toss one of those packages in the refrigerator to thaw the night before and it is ready for any of these recipes right on time. Or, if we forget to thaw the night before, the chicken can always be thawed in the microwave. Makes four or five meals for two out of one $5 rotisserie chicken.

    1. Hi Harry, those rotisserie chickens are the best and only $5.00!! Mark and I do the same thing, I love having some bags of leftover chicken in the freezer ready to go for any meal. Great reminder, thank you, my friend! Linda

      1. I stand by my comment from two years ago. We are still doing this and the price is still $5 at Sam’s Club. This is one price we cannot complain has risen since it hasn’t.
In fact, we are close to restocking a few chickens by this method soon. LOL!

  2. Linda: I am amazed at this content! Thank you so much for so MANY chicken recipes, some of which I have wondered how to produce. I have purchased the chicken shredder “appliance” on Amazon, too. THANK YOU! WOW!

And I love Harry’s idea with the deli chickens, too. What a great money saver!! Great idea! If only I had enough room in our large freezer that is chocked full up with our berry harvest again…and we haven’t even finished the blackberries or even started with the aronias yet! HELP!! Well, we’ll never run dry with what berries we can use in our smoothies or greek yogurt breakfasts…

    Hugs and thanks,

    JESS

  3. We never have leftovers in our home, since we call them planovers. Wether it’s chicken, turkey or pot roast, there is always a plan going forward. Sometimes the second day is better than the first.
