Pumpkin Cookie Recipe

This recipe is so awesome because you stir the ingredients in a bowl, no mixer needed. Boy, does this bring back memories of making cookies with my daughters! I remember my girls sitting on the kitchen counter while we measured the ingredients into the bowl, I love those memories!

Grab a medium bowl and combine the pumpkin, sugar, oil and the egg.

In a separate mixing bowl, sift together the flour, baking powder, cinnamon, and salt. Dissolve the baking soda in the milk.

Add all three mixtures together, then stir in the vanilla until mixed thoroughly.

Fold in the chocolate chips and pecans.

Spoon the batter onto a greased cookie sheet, (about 1 tablespoon scoop).

Bake in a preheated oven at 350 degrees for about 10 minutes. Serve and enjoy.
