  1. Friend taught me to cut up pineapple into small pieces and eat with cottage cheese…..very refreshing and great for diet.

  2. Something I learned years and years ago about pineapple – the fresh ones! I had a cousin who worked for Dole Pineapple in Hawaii. He sent my mother a case of pineapple – 6 ripe ones! No one in my family liked the fresh pineapple except me! Well, pineapple is pretty acidic and I had bleeding gums from eating so much of it! I learned to salt the freshly cut pineapple just a little to help cut the acidity. Now I use Tajin.

    Oh and for the core of a fresh pineapple, put it in a deep dish and macerate it a bit. It will release some juice and break down some of the toughness of the fibers.

    Don’t forget to dehydrate pineapple – fresh or frozen work but I like a good ripe fresh pineapple for this. Dehydrating brings out the sweetness even more and it is like candy!

    One more thing!! When I was growing up, we canned all the fruit we could. When we canned apricots, mom insisted on adding a bit of crushed pineapple (from a can) to each quart jar of apricots. We didn’t eat the apricots straight from the jar. We made the most delicious apricot pies. We poured a quart jar full of apricots (with the pineapple and juice) into a saucepan; heated it up and thickened it with a cornstarch slurry. Then into the pie shell and oven. So So good. After I became more acquainted with dehydrating, I started making fruit leather with the fruit – I just drained a quart of the juice, then mashed the fruits and spread onto sheets to dehydrate.

  4. It’s raining now in Florida and we have thunderstorms and regular storms every other day now and it all leads us into hurricane season.

    I took my chance to run to a neighborhood Walmart and they carry the Dole brand juices and I got their Pineapple Orange juice. I like fresh, canned and dried pineapple, but it can seem potent. I did see canned pineapple juice which I may grab next time to store away. Besides general prepping, we get a hurricane and we usually lose power for a few days to a week.

    I try to incorporate it into my diet per se because like garlic it helps clean our system. Along with good quality olive oil, onions, ginger, lemon juice and turmeric it helps with circulation and keeping the circulatory system in working order along with stimulating the metabolism, helps keep us healthy.
