Easy Healthy Breakfasts You Can Make Quick

I’m sharing some of my healthy breakfasts you can make very easily today. Some of the recipes you can make ahead of time and eat them cold or heat them up in the microwave. I will share the printable recipes at the bottom of the post. I know we are all trying to eat healthier so I thought I would try and add as many vegetables to some of my old standby recipes as possible. You basically need a skillet, maybe a cast iron one like this: Lodge L10SK3 Pre-Seasoned Skillet, 12-Inch a muffin/cupcake pan similar to this one: Nordic Ware Natural Aluminum Commercial Muffin Pan, 12 Cup and All-Clad 59946 Stainless Steel Lasagna Pan with Lid Specialty Cookware, 14.5 by 11.75 by 2.5-Inch, Silver

I know a lot of my friends raise chickens and I really admire them. No, I do not raise chickens, I buy my eggs at the supermarket. I love seeing pictures on Facebook of the different colored homegrown eggs though. To be honest with you I don’t think I could slaughter or kill the chickens for meat. I will become a vegetarian before I could do that. I would trade a loaf or two of homemade whole wheat bread for some fresh eggs.  I’m just thinking out loud here if I had to barter after a disaster, or whatever.

Healthy Breakfasts

1. Vegetable Breakfast Cupcakes

Instructions
  1. Preheat the oven to 350 degrees. Grease a muffin tin for a dozen cupcakes. Combine all of the ingredients and scoop ½ cup of the mixture into each muffin/cupcake holder. Bake for 30-35 minutes or until golden brown and the eggs are set.

2. Crust-less Veggie Quiche

Ingredients
  • 12 eggs
  • 1- medium grated uncooked zucchini
  • 1 grated carrot
  • 1 cup chopped red bell pepper
  • 1 cup chopped yellow bell pepper
  • 1 chopped onion
  • Salt & pepper
Instructions
  1. Preheat the oven to 375 degrees. Grease a 9-inch by 13-inch pan and set aside. Combine all of the ingredients in a large bowl and pour into the greased pan. Bake for 45-60 minutes until golden brown or the eggs are set. This recipe is great to trade out with some of your other favorite vegetables. You can cut the quiche into squares and freeze them to eat later. Use your microwave or toaster oven to reheat them.

3. Extra Healthy Scrambled Eggs

Ingredients
  • 12 eggs slightly beaten
  • 1 tablespoon bacon grease or butter
  • 1/2 cup grated carrots
  • 1/2 cup grated zucchini
  • 1/2 cup chopped cooked broccoli
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped onion
  • Salt & pepper
Instructions
  1. Saute the vegetables of choice in the butter or bacon grease. Slowly stir in the slightly beaten eggs and cook until the eggs are set, as desired.
