This is the best chicken and broccoli casserole ever! My family has been making this creamy, cheesy, and chicken broccoli casserole for years. I know for sure it’s been over 56 years, and the family still loves it. Some of the ingredients have changed over the years, but we never get tired of making it.

Thank you for letting me share my homemade recipe with you. I’m working on a cookbook, and this makes it one step easier for me. We used a Corningware pan today, which came from my daughter’s cupboard. I love these pans! This chicken casserole recipe is truly comfort food that everyone can enjoy!

Items You May Need In The Kitchen
Chicken And Broccoli Casserole
Ingredients
- Broccoli: A Vegetable known for its green head, stalk, and small leaves. High in fiber, iron, vitamin K, vitamin C, and potassium.
- Chicken (I used a rotisserie chicken): I love using rotisserie chicken, which can be purchased at the store. It’s cooked and has a delicious roasted flavor! It’s ready to be cut up into bite-sized pieces! Cooked chicken can also be used.
- Cream of Chicken Soup: A savory and smooth creamy chicken soup made of chicken stock, seasonings, small bits of chicken, celery, and cream.
- Mayonnaise: Also known as “mayo.” A thick and creamy sour dressing made of eggs, oil, vinegar, or lemon juice.
- Lemon Juice: Used to enhance the flavors of the other ingredients, it gives a boost of lemon zest flavor that we all love. It helps lock in the moisture in the chicken and broccoli casserole and adds a hint of tartness.
- Curry Powder: Adds a delicious, savory, and deep umami flavor to the casserole! Gives the perfect kick of spice! Generally made of cumin, ginger, turmeric, and black pepper.
- Grated Colby Jack Cheese: A very smooth, moist, and mild cheese. It is the perfect choice for this chicken and broccoli casserole due to its melting capabilities, which help to combine all of the ingredients together.
- Frosted Flakes or Corn Flakes: The perfect topping! Use Frosted Flakes for a sweeter crunch and Corn Flakes for a milder yet savory crunch.
- Butter: Due to its high fat content, butter helps produce a softer sweet potato and enriches the flavor. It browns the sweet potato casserole as it cooks.

How do I store the leftover chicken and broccoli casserole?
Store the leftovers in an airtight container in the refrigerator for 3-4 days.
Can I freeze the chicken and broccoli casserole before baking it?
I wouldn’t recommend it because the mayonnaise may become runny. It’s best when frozen after baking.
Could I freeze the leftover chicken and broccoli casserole?
Yes, I freeze this recipe in serving sizes in an airtight container for 2-3 months.
Is it okay to put raw chicken in the recipe?
No, it’s not safe to use raw chicken in this recipe because the temperature of the meat may not reach the required temperature when fully cooked. This recipe is reheating the cooked ingredients.
Can I put raw broccoli in the recipe?
Unfortunately, no, you can’t, or the recipe will be more like soup because the broccoli needs to be drained of the excess water it releases after cooking.
Why is my chicken and broccoli recipe watery?
Your broccoli was likely not cooked enough or drained long enough. I use a paper towel to push the liquid out of the broccoli after cooking it.
Could fresh broccoli be cooked without boiling it?
Yes, you can microwave it or steam it.
What can I serve with this casserole?
- Fresh Fruit
- Mixed Green Salad
- Sliced Fresh Tomatoes
- French Bread
- Dinner Rolls
- Serve Over Rice
Could I use Ritz crackers instead of Frosted Flakes?
I have used crushed Ritz crackers on top of the casserole before I drizzle the butter on top.
Would cream of mushroom soup work instead of cream of chicken soup?
Yes, you can trade out the soup for cream of mushroom soup, but it will give it a slightly different taste. This is what’s great about cooking from scratch: we can substitute whatever works.
What kind of cheese can I use in this chicken and broccoli casserole recipe?
We typically use grated Colby Jack cheese. I have used cheddar cheese, Mozzarella cheese, and even sharp cheddar cheese. I like all three choices of cheese.
Are there additional spices I can use when making this chicken and broccoli casserole recipe?
Thyme, black pepper, garlic powder, onion powder, and a little salt.

Hi Linda,
we have made variations on this recipe for years while our kids were growing up.
your version has a few things I have not tried and next time we make it I am going to try them.
Basics are chicken, cream soup, broccoli, cheese & a crunchy for the top.
thanks for all your time spent putting this blog together.
Hi Bill, thank you for your kind words, my friend! Happy Holidays! Linda
Hi Linda, what other seasonings other than curry can be used? I like curry, but curry doesn’t like me. I will also use less cheese because of lactose intolerance. Thanks for the recipe. Have a great Holiday!
Hi Mildred, I would skip the curry. I have made it with and without the curry. Happy Holidays, my sweet friend! Linda
Yum! This is a family favorite! Thanks for sharing!
Hi Heidi, thank you for the 5 stars, my sweet friend. I’m glad your family loves it! Linda
My family loves this casserole! It’s one of our favorites! We serve it warm over rice. It is so good! Thank you for sharing!❤️
Hi Camille, thank you for the 5 stars, my sweet friend! I like hearing you serve it warm over rice! Great idea, Linda
I may have to try this, but I don’t like curry anything so I’d probably leave it out. Also, Jane isn’t a big broccoli fan, but if it’s cooked to death she’ll eat it.
I’ve been harvesting apples every few days now for two weeks and the tree still has dozens on it. This morning I picked almost two bushels. That makes six bushels I’ve picked off our two trees this year and I’ve given several bushels to neighbors and friends.
In the past two days Jane has made apple pie, apple crisp, apple cobbler and apple cinnamon bread–all of which are superb. We both love the flavor of our Anna Apples this year.
I’m canning applesauce and apple pie filling–seven quarts of each. Normally I’d set up my propane turkey broiler and do the canning outside to avoid heating the house but it’s so windy that wouldn’t be safe–and yes I’ve fashioned plywood wind deflectors for such occasions. Too windy even for them. Had to round up our lawn furniture and trash cans to keep them from blowing away.
Hi Ray, thank you for the 5 stars, my sweet friend. You can leave the curry out. Mark does not like anything curry, just FYI. This is his mothers recipe. Well, it was probably some church neighborhood recipe handed out and its keeps changing a little each year! LOL! I can almost smell the apple pie filling from here! I remember making it and oh my gosh your house smells heavenly! She made apple cinnamon bread, apple cobbler, and apple crisp and her famous apple pie! My mouth is watering. You are so blessed and so are your neighbors with the all the apples you picked. God is good! I hope the winds slow down where you live! Stay safe, Linda
