I cook mine in the microwave. Wash, scrub well. Prick skin on both sides, several times. So good. I do use Stevia brown sugar though and cinnamon. So good, and I only started eating them at the end of last year. Before I just couldn’t eat them. Husband doesn’t like them any way.

Okay, I have GOT to try cooking sweet potatoes in the slow cooker. I grow Covington Sweet Potatoes every year. Usually I peel and boil them, then Jane makes hers with brown sugar and butter and I just mash mine and add butter and salt. Either way they are delicious but now I have to try them with some cinnamon and vanilla as well.
BTW: I only harvested a few of my sweet potatoes two weeks ago. The rest are still in the ground awaiting digging. I’ll probably do that today. I wanted to see if a frost or hard freeze would sweeten them more than normal–like it does for carrots or parsnips, but I’m tired of waiting for that to happen. We’re still in the mid-40’s at night. My tomatoes are still producing and my cool weather crops are simply loving this weather.

Hi Ray, I would love to move there, but the elevation is too high 3333! The biggest problem is we are stuck in this house. We gave money to our daughter to build this house and the elevation is even higher. I may not have mentioned to you I went on a sisters reunion with our husbands and I didn’t need oxygen for ten days! The elevation was 7 or 9 in California. I would give anything to move where I didn’t need oxygen 24/7. When I moved up north in Utah I needed oxygen but did not know it until I was admitted to a hospital back on 4-12-2024. My heart and lungs are so damaged I will never get better. Lack of oxygen for so many years ruined my health. I never smoked or vaped, it’s crazy. Getting old isn’t fun, LOL! Linda
