Quick And Easy Way To Make Ebelskivers

This is my quick and easy way to make Ebelskivers for the family. When I was a little girl, my grandmother and mother would make these Whole Wheat Ebelskivers for special occasions like Christmas Eve or Christmas Day. I carried on the tradition with my own daughters. My mother used a cast iron Ebelskivers (pronounced: able-skeevers), pan. I used a cast-iron one for years, in fact, I think one of my daughters has the original one. I purchased one that is made by Nordic-Ware.

I have a glass top (which I do not like) stove. LOL! The Nordic-Ware works better on my stove than the cast-iron style pan. The bottom is a little flatter with a ring that generates the heat evenly on a glass stovetop.

I love making memories with my kids and grandkids, and this one is truly a hit for everyone involved! Just picture a heaping platter with these Ebelskivers, freshly whipped cream, butter, powdered sugar, several syrup flavors and bring on the jam and jellies! Life is good when you surprise your family with these, I promise. UPDATED: I now have a gas stove so I can use any Ebelskiver pan!! Instructions
  1. After whisking, add the dry ingredients.

  2. Heat the Ebelskiver Pan.

  3. I use vegetable spray instead of putting 1 teaspoon of oil in each Ebelskiver hole.

  4. Heat the pan until very hot. I use a toothpick to flip mine. I will cook both sides and then cook them on their side.

They look really fancy, but they are so easy to make. My grandkids love these! Although Mickey Mouse Pancakes/Waffles are still their favorites!

  1. Every Christmas Eve our whole family would meet at my Mom’s. Our traditional meal was Bunsteads, chips relish tray and an over abundance of cookies . It was tuna, dill relish, hard boiled eggs, bell pepper, onion, diced cheddar cheese and mayo. This was spread on hamburger buns, wrapped individually in foil, baked in a 325° oven for 30 minutes. Sounds odd for Christmas eve, but my maternal grandmother, perhaps her mom to, started this tradition and has carried on for years. All 33 of us had great times together. Linda, God bless you and yours as well. We are preppers as well. Some of us anyway. Hugs!!

  2. Wow! I don’t think I’ve made these in over 20 yrs. Used to make them at least once a month years ago. Still have my CI pan though!

  3. Oh I’ll have to try out your recipe! I don’t ever remember my mother making ebelskiver, but I found a cast iron pan in the attic, so I gave it a try. Loved them–but then DH had his T2Diabetes, so I regretfully hung up the pan. Well–he had his teeth out this summer, and almost immediately his blood sugar stabilized and dropped! So at least as a special-occasion treat, we’ll start having ebelskiver again! Christmas would be perfect!

    My mother wouldn’t put up the tree until Christmas Eve–so I’ve kept up the Danish custom. Then it stays until at least Twelfth Night–sometimes Candlemas.

    1. Hi Rhonda, my grandkids love the Ebelskivers. It’s really just a pancake but so much better because of the shape!!! Wow, you wait until Christmas Eve to put up your tree. It’s so fun to carry on the traditions! It’s so funny, years ago I remember my mom stopped putting up a Christmas tree. LOL! Now, that I’m 70, I get it! I’m not putting one up this year because I have a puppy who so busy. But I have Poinsettias everywhere. I got them from Target last year. They bring me joy even though they are only about 12-inches high. Bring on some joy! Linda

GONNA GET MINE DOWN OFF THE WALL ! love you are sharing these recipes ! gonna try hard tac also ! hubby liked fry bread for breakfast ,jus self risin”flour ,tad of salt ,water till gooey, drop by spoonfulls in hot grease ,serve w/ any syrup ,but old fashion cane syrup is best ,lots of butter ! i still do !
