Ingredients

  • 1 cup Sugar
  • 1 cup Butter, softened
  • 1 Egg
  • 1/2 cup Milk
  • 1 teaspoon Vanilla
  • 2 teaspoons Cream of Tartar
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 5-1/2 cups Flour
Raisin Filling
  • 1 cup Raisins
  • 1/2 cup Water
  • 1 cup Sugar
  • 1 tablespoon Flour
Instructions
Cookie Dough Instructions
  1. Preheat the oven to (350°F) = (176°C) degrees.

  2. Combine all of the ingredients except the flour. Cream until smooth, and slowly add the flour one cup at a time.

  3. Flour the countertop and roll out the sticky dough with a floured rolling pin to about 1/8 to 1/4 inch thick.

  4. Use a cookie cutter to cut out the size of the cookie you desire.

Raisin Filling Instructions
  1. Combine the ingredients in a saucepan and stir constantly. Bring the mixture to a boil and then simmer until thickened.

  2. Remove the pan from the heat and let it cool slightly.

  3. Scoop one heaping tablespoon of the filling into the middle of one rolled-out cookie circle, then place another cookie on top.

  4. Pinch the edges together with your fingers or a fork.

  5. Bake for 10-20 minutes, depending on the thickness of the cookie dough.

  6. Please feel free to bake longer if you like a crisp cookie. This recipe makes 12-24 cookies, depending on the size of the cutter you use and how thick you cut them.
