In a large bowl, whisk together the olive oil, lemon juice, 1/4 cup parsley, lemon pepper seasoning, garlic powder, onion powder, smoked paprika, and crushed red pepper.
Add the chicken thighs and toss until evenly coated. Cover and refrigerate for 1 hour to marinate.
Preheat the oven to 425°F (218°C). Line a 9x13" baking dish with parchment paper.
Remove the chicken from the marinade, letting any excess drip off. Arrange in a single layer on the prepared baking dish, leaving some space between each piece.
Place the lemon slices over and around the chicken.
Bake for 23–25 minutes, or until the chicken reaches an internal temperature of 165°F.
