Ingredients
  • 5-6 cups boneless, skinless chicken breasts, cooked, and cut into bite-size pieces
  • 6 cups package Spring Lettuce Mix, chopped
  • 1/2 cup chopped purple cabbage
  • 1/2-1 cup shredded carrots
  • 1/2 cup bean sprouts
  • 1/4 cup green onions, finely chopped
  • 1/2 cups sliced water chestnuts
  • 16- ounces of Mandarin Oranges, drained
  • 1/2 cup slivered or sliced almonds
  • 2 packages of Snack Ramen noodles (discard the sauce packet)
Sweet & Sour Chicken Salad Dressing
  • 2 tablespoons sweet & sour sauce
  • 1-1/2 teaspoons soy sauce
  • 3/4 cup seasoned rice vinegar
  • 2 teaspoons sugar
  • 2-1/2 tablespoons sesame oil
  • 1/2 cup vegetable oil
  • dash of salt
  • 1/2 teaspoon pepper
Instructions
Sweet & Sour Chicken Salad
  1. Grab a very large bowl and place the chicken, the chopped lettuce, chopped cabbage, shredded carrots, the bean sprouts, chopped green onions, sliced water chestnuts, the Mandarin oranges, and the almonds in the bowl so you can toss them together.

    2. Set the bowl aside while you make the salad dressing.

    3. Crush or crumble the Snack Ramen-type noodles. Add the noodles to the salad right before serving.

Sweet & Sour Chicken Salad Dressing
  1. Grab a shaker bottle or your blender to mix all of the ingredients together until smooth.
