  • 2 tablespoons salad oil
  • 3 eggs
  • 1 cup bean sprouts, drained
  • 1/2 cup ham, chopped
  • 2 tablespoons green onions
  • 1 tablespoon soy sauce
  1. Heat oil in a large skillet. Beat eggs until thick and lemon colored. Stir in the bean sprouts, meat, onion, and soy sauce. Scoop 1/4 cup mixture into the hot skillet. Push the egg over the meat to form a patty. When the eggs have started to set up, flip over and cook the over side. Serve with brown gravy.
