  • 3 cans of corn (15 ounces, drained)
  • 1 bunch green onions, chopped
  • 8 chopped mini yellow and red bell peppers
  • 1/2 cup Cilantro, chopped
  • 6 Roma tomatoes, chopped
  • 1-1/2 cups grated cheddar cheese
  • Dressing
  • 1 cup mayonnaise
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Juice of one lime
  • 1 pkg. Fritos (9.25 ounces)

  2. Combine the corn, green onions, bell peppers, Cilantro, and tomatoes in a large mixing bowl. Make the dressing in a separate bowl and whisk until smooth. Pour the dressing over the vegetables and mix together. Right before you serve the salad, add the grated cheese and Fritos.
