  • 12 chicken tenderloins or chicken tenders
  • 2-16- ounce cans pineapple chunks do not drain
  • 2-15- ounce cans mandarin oranges drained
  • 1/4 cup cornstarch
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1/4 cup lemon juice
  • 1 teaspoon sea salt
  • 1 teaspoon ginger
  1. Combine the ingredients in a large freezer bag and use your hands to massage the ingredients in the closed bag before placing it in the freezer. I like to thaw the bag the night before in the refrigerator so I can put the contents in the slow cooker on low in the morning. Cook on low for 5-7 hours in your slow cooker. You can also use your pressure cooker (add one cup of water) if the items are totally thawed on HIGH for 10-12 minutes. Shred the chicken after cooking and serve over steamed rice.
