  • 5 cups broccoli florets, chopped into small bite-size pieces
  • 1-2 apples, cored and chopped into small pieces
  • 1 pear, cored, and chopped into small pieces
  • 1/2 cup purple onions, chopped into bite-size pieces
  • 1 cup cashews
  • 1 cup dried cranberries
Broccoli Cashew Salad Dressing
  • 1/2-3/4 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons fresh lemon juice
  • 1/3 cup honey (please microwave to make it easier to stir)
  • 1/4 teaspoon sea salt
Broccoli Cashew Salad Instructions
  1. Place the broccoli, chopped apples, chopped pear, chopped purple onions, cashews, and cranberries in a large mixing bowl. Set the bowl aside and make the salad dressing.

Broccoli Cashew Salad Dressing
  1. Grab a small bowl, and combine the mayonnaise, sour cream, lemon juice, honey, and salt. Stir until mixed through. Pour the salad dressing over the salad and stir it in to cover the ingredients. Enjoy.
