Brussels Sprouts Salad by Food Storage Moms

Ingredients
  • 1-1/2 pounds cleaned, chopped or shredded Brussels Sprouts
  • 1/2 cup pine nuts or choice of nuts
  • 1/2 cup freshly chopped parsley
  • 2 cups lettuce or spinach
Salad Dressing
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Dijon prepared mustard
  • 2 teaspoons honey
Instructions
  1. Combine the ingredients, you can add more or less of any of the vegetables and nuts. You can also add chopped apples if desired.

Salad Dressing Instructions
  1. Combine the ingredients for the dressing in a small mason jar and mix thoroughly. Pour the dressing over the salad and serve immediately.
