White Chocolate Chex Mix

Ingredients
  • 5 cups mini pretzels
  • 5 cups Honey Nut Cheerios
  • 5 cups Corn Chex
  • 2 cups salted peanuts
  • 1 pound package of Christmas colored M & M's
  • Two 12- ounce packages white baking chips
  • 1/4 cup shortening
Instructions
Option #1
  1. OPTION #1

    1. Line two cookie sheets with waxed paper.

    2. Place the mini pretzels, Honey Nut Cheerios, Corn Chex, salted peanuts, and M&M's on the cookie sheets.

    3. Mix them up so each one is distributed evenly on the cookie sheets. Set the mixture on the cookie sheets aside.

    4. Melt the white chocolate with the shortening in a separate bowl in the microwave at one-minute intervals.

    5. Watch constantly. Stop and stir the mixture until the chips are melted through.

    6. Drizzle the melted chocolate over the pretzels, Honey Nut Cheerios, Corn Chex, salted peanuts, and M&M's.

    7. Let it "set up" and then break it apart into sections. If your kitchen is too warm, place the cookie sheets in your refrigerator until the coated mixture firms up.

    8. Store in airtight containers.

  1. OPTION #2

    1. Grease a large bowl with butter (I use a baggie to spread it).

    2. Combine the mini pretzels, Honey Nut Cheerios, Corn Chex, salted peanuts, and M&M's in the buttered bowl. Set the mixture aside.

    3. Melt the white chocolate with the shortening in a separate bowl in the microwave at one-minute intervals. Watch constantly.

    4. Stop and stir the mixture until the chips are melted through. Drizzle the melted chocolate over the pretzels, Honey Nut Cheerios, Corn Chex, salted peanuts, and M&M's.

    5. Line two cookie sheets with waxed paper to keep the mixture from sticking to the sheets.

    6. Scoop the coated mixture onto the cookie sheets. Let it "set up" and then break it apart into sections. If your kitchen is too warm, place the cookie sheets in your refrigerator until they firm up.

    7. Store in airtight containers.
