Ingredients
Cookie Bar Dough
  • 1 cup of butter, softened
  • 2/3 cups granulated white sugar
  • 1 cup brown sugar (packed)
  • 4 eggs
  • 1-3/4 cups peanut butter (I used creamy)
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1-1/2 teaspoons vanilla extract
  • 2 cups flour
  • 2 cups oatmeal
Cookie Bar Filling
  • 1 pound peanut butter (whip with a hand mixer until it reaches a fluffy consistentcy)
Chocolate Icing
  • 1-1/2 cups butter, melted
  • 1-1/2 cups unsweetened cocoa
  • 5-1/2 cups powdered sugar (recipe states 1-1/2 pounds)
  • 1 teaspoon salt
  • milk
Instructions
Cookie Dough Base
  1. Cream the butter, white sugar, brown sugar, eggs, peanut butter, baking soda, salt, and vanilla. Mix well.

    Stir in flour and oats.

    Spread dough out on two BUTTERED 9 by 13-inch (one-inch deep) baking pans. Preheat oven to 325°F (163°C). Bake for 10 minutes or until lightly browned. "DO NOT OVERBAKE".

    Cool until the top is set. Then spread one pound of peanut butter that has been whipped to a fluffy consistency.

    Frost with Chocolate Icing. Cut into bars.

Chocolate Icing
  1. Melt the butter in a saucepan and add the unsweetened cocoa, salt, and powdered sugar. Add a little milk until the consistency is what you want. Carefully spread on top of the whipped peanut butter.
