Ingredients
  • 1/2 cup of butter, softened
  • 1/2 cup white granulated sugar
  • 2 large eggs (at room temperature)
  • 1 teaspoon vanilla extract
  • 2 cups white all-purpose flour (I use bread flour)
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground allspice
  • 3/4 cups mashed ripe bananas (about two bananas)
  • 1 cup of whole-berry cranberry sauce
Cranberry Banana Coffee Cake Topping
  • 1/2 cup brown sugar (packed)
  • 1/2 cup finely chopped pecans
  • 2 tablespoons all-purpose white flour (I use bread flour)
  • 2 tablespoons butter, melted
Instructions
  1. Preheat the oven to (350°F) = (176°C) degrees. Prepare a 9 x 13 inches baking pan with nonstick cooking spray.

  2. Whisk together the dry ingredients: flour, baking powder, ground cinnamon, salt, and ground allspice.

  3. In a large mixing bowl, cream the butter and sugar until light and fluffy, for 5 to 7 minutes.

  4. Beat in eggs and vanilla.

  5. Then, add the bananas and mix until combined.

  6. Add the dry ingredients to the cream mixture and beat just until combined.

  7. Spread evenly into the prepared baking pan and top with dollops of cranberry sauce.

Coffee Topping
  1. In a small bowl, combine the brown sugar, chopped pecans, and flour.

  2. Stir in the butter. Sprinkle over the top of the cranberry sauce. Bake for 45 to 50 minutes.

  3. Cool in the pan on a wire rack. Slice into squares and serve warm.
