Ingredients
  • 4 Bunches Baby Bok Choy (or Two Large)
  • 1 Bunch green onions, chopped
  • 1/2 cup sliced almonds
  • 1- 16 ounce can of chow mein noodles
  • 1 tablespoon sesame seeds (optional)
Bok Choy Salad Dressing
  • 1/2 cup olive oil
  • 1/4 cup white vinegar
  • 1/3 cup white granulated sugar
  • 3 tablespoons soy sauce
Instructions
Bok Choy Salad
  1. Chop the Bok Choy into small bite-size pieces (rinse well in a colander)and place the chopped Bok Choy in a large salad bowl. Add the chopped green onions, sliced almonds, and chow mein noodles. Add the sesame seeds if desired (optional). Thoroughly combine the ingredients. Pour the dressing over the salad, stir, and serve the salad.

Bok Choy Salad Dressing
  1. I used my Magic Bullet (small blender) to mix the olive oil, white vinegar, white granulated sugar, and the soy sauce. Mix or shake the dressing again right before pouring over the chopped Bok Choy Salad.
