Ingredients
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 2 eggs
  • 1-2 teaspoons vanilla extract
  • 1 teaspoon peppermint extract (optional)
  • 1/2 cup all-purpose flour
  • 3/4 cup unsweetened dark cocoa powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
Instructions
  1. Preheat oven to 350 degrees. Grease 8-inch pan. In medium saucepan melt butter. Remove from heat and pour into a mixing bowl. Add sugar, eggs, vanilla, and peppermint. In a separate bowl combine flour, cocoa powder, salt, and baking powder. Pour into a mixing bowl and combine well with the wet ingredients to remove lumps. The batter will be very thick. Spread into greased pan. Bake for 25-35 minutes. Brownies should still be soft when you remove them from the oven. Do not overbake! These brownies are dark and rich. Let cool completely. When cool, serve with some vanilla ice cream. Cooking time will vary depending on the size of your skillet.

    Please note, you can bake this in a greased and floured 8-inch pan at 350 degrees for 35 minutes as well.
