These are easy to make summer fruit salads you can take to any party or serve as a side dish. I love it when I can grab stuff from my pantry to make some of these. I decided to grab a few recipes from some old neighborhood cookbooks that have been around for 30-40 years. I bet you have some of these recipes in your cookbooks!

It’s summertime and family reunions are planned, as well as neighborhood parties. Please let me know if you have made some of these recipes. My sister-in-law, Linda makes her Acini fruit salad for every family reunion and we all look forward to eating it every year. So many of these fruit salads have whipping cream which makes them even yummier, in my opinion. I grew up with Dream Whip. Oh my goodness, I have to laugh about that one. It was a package of dry ingredients that we added cold water to and whipped until it was fluffy.

Then came Cool Whip in the freezer section. I prefer a freshly whipped cream with really good vanilla added to it. Gossner’s makes shelf stable whipped cream, but the shelf life is pretty short. But it’s a nice choice because you only need to put the container in the refrigerator for 8 hours before whipping. I saw some shelf stable whipping cream at Trader Joe’s as well. I love having some of that on hand. I wish we had a Trader Joe’s store here in Southern Utah. My weakness is butter and real whipping cream. Let’s look at these fruit salads today.

  • 2 cups pineapple drained
  • 2 cups mandarin oranges drained
  • 2 cups shredded coconut
  • 2 cups miniature marshmallows
  • 2 cups sour cream
Instructions
  1. Mix together and chill.

Fruit Medley

Ingredients
  • 1 8- ounce can fruit cocktail drained
  • 2 bananas peeled and sliced
  • 1 small apple cut into bite-size pieces
  • 1/2 cup halved seedless grapes red or green
  • 5-8 maraschino cherries cut in pieces
  • 1/2 cup whipped cream
Instructions
  1. Combine all the fruit and fold in the whipped cream. Chill.

Hawaiian Salad

  • 3 bananas peeled and cubed
  • 3 apples cut and diced
  • 1 bunch of red grapes-removed from stems
  • 1 can mandarin oranges-drained
  • 1/2 cup chopped walnuts
  • 1/2 cup shredded coconut
  • 2 fresh pears cut and diced
  • 1/2 or 1 cup whipped cream
Instructions
  1. Combine fruit and fold in the whipped cream, chill.

Cranberry Salad

Ingredients
  • 1 pound cranberries-grind or chop very fine
  • 1 package of miniature marshmallows
  • 1/2 cup sugar
  • Mix the above ingredients and place in the refrigerator overnight.
  • 2 cups chopped apples
  • 1 small can of pineapple chunks drained
  • 1/2 cup sliced red grapes
  • 1 cup of nuts
  • 1-2 cups of whipped cream
Instructions
  1. Mix all of the ingredients together and fold in the whipped cream. Chill.

Yummy Ambrosia Salad

  • 1 can of crushed pineapple, drained

  • 1 pkg. lemon jello
  • 1 cup pineapple
  • 1 cup orange juice
  • 1/2 cup crushed pineapple drained
  • 2 sliced bananas
  • 1 can mandarin oranges drained
  • 1 cup whipping cream whipped
Instructions
  1. In a saucepan heat the pineapple and orange juice to dissolve the jello.
  2. After cooling and setting up a bit, add the rest of the ingredients and combine everything.
  3. Put in an 8 inch by 8-inch square dish. Chill, garnish with crushed nuts and cherries if desired.

Raspberry Bavarian Jello Salad

Ingredients
  • 1 pkg. raspberry or strawberry jello
  • 1 cup boiling water
  • 1 small pkg. partially defrosted frozen berries
  • 1 cup miniature marshmallows
  • 1/2 cup whipped cream
  • Dissolve the jello in boiling water add the fruit, then the marshmallows.
  • Place in the refrigerator to thicken. Add the whipped cream.
Instructions
  1. Dissolve the jello in boiling water, add the fruit, then the marshmallows.
  2. Place in the refrigerator to thicken. Add the whipped cream.
  3. Mix well and put back in the refrigerator to set up.

7-Up Jello Salad

Instructions
  1. Mix:
  2. 2 (3-ounce) packages lemon jello
  3. 2 cups boiling water
  4. 1 cup pineapple tidbits (save juice)
  5. 1 (12-ounce) can 7-up
  6. 4 bananas, cubed
  7. 2 cups miniature marshmallows (more needed if you want to cover the top)
  8. Let sit overnight, or until firm.
  9. Combine the following, boil, then cool:
  10. 1 beaten egg
  11. 1 tablespoon flour
  12. 2 Tablespoons butter
  13. 1/2 sugar
  14. 1/2 cup pineapple juice
  15. Whip one cup of whipping cream, and fold into the cooled mixture directly from above.
  16. Spread on top of the salad, sprinkle with chopped walnuts if desired.

Peach Jello Salad

Instructions
  1. Cream Layer:
  2. 1 pkg. lemon jello
  3. 1 cup boiling water
  4. 1 cup orange juice
  5. 1 cup whipping cream, whipped
  6. 1- 3-ounce pkg. cream cheese (softened)
  7. 1/4 cup chopped pecans
  8. Dissolve jello in the water, add orange juice. Refrigerate until slightly thickened.
  9. Combine the whipped cream and cream cheese together.
  10. Stir in the pecans and fold in the jello mixture. Now prepare the peach layer.
  11. Peach Layer:
  12. 1 pkg. lemon jello
  13. 1-1/2 cups boiling water
  14. 1 tablespoon lemon juice
  15. 2 cups fresh, sliced peaches.
  16. Dissolve jello in the boiling water, add lemon juice and sliced peaches.
  17. Spread the peach layer over the cream layer above. Return to the refrigerator to set up and chill.

Blueberry Jello Salad

Instructions
  1. Dissolve:
  2. 2-6-ounce packages raspberry jello
  3. 3 cups boiling water
  4. Drain and reserve juice:
  5. 1 small can blueberries (drained-save juice)
  6. 20 ounce can crushed pineapple (do not drain)
  7. Add enough water to make 4 cups of the juice above and add to dissolved jello
  8. Combine all of the ingredients and pour into a 9 inch by 13-inch pan.
  9. Partially set the jello in the refrigerator. Add the blueberries and pineapple.
  10. Top With Cream Cheese Mixture:
  11. 8-ounce cream cheese (softened)
  12. Beat in 1 cup sugar
  13. Add 8 ounces of sour cream
  14. Spread on top of set jello and sprinkle with crushed nuts

My Sister’s Pretzel Salad

Instructions
  1. 1st layer: Melt 3/4 cup butter in a 9 by 13-inch pan
  2. Mix:
  3. 2 cups crushed pretzels with 2 tablespoons sugar
  4. Sprinkle the pretzels/sugar on the pan with the melted butter.
  5. Bake @425 degrees for 5 minutes
  6. 2nd layer:
  7. Mix:
  8. 8-ounce cream cheese softened
  9. 1 cup sugar
  10. 1 small can crushed pineapple (drained)
  11. 1-9 ounce Cool Whip, pour this mixture onto pretzel crust
  12. 3rd layer:
  13. Dissolve jello and combine the rest of the ingredients in a bowl
  14. 6-ounce pkg. strawberry jello
  15. 1 cup boiling water, dissolve jello
  16. 1 cup cold water
  17. 2 packages of frozen strawberries-partially defrosted
  18. Pour onto the second layer. Put the pan in the refrigerator to set the salad.

As you can see most of these fruit salads have whipped cream, jello or just fruit. My husband would love it if I fixed jello every night. There is nothing better than fresh fruit salads in the summer. Take advantage of the ad’s in the paper to purchase many of these ingredients when the fruit is the freshest and cheapest and canned goods can be good additions to your pantry stash. Get creative if you want to try other combinations. Mix up a great salad and see how much more you’ll enjoy summer meals!

    I have made the pretzel salad, I like that one. My grandma always made the Pistachio whipped cream salad when I was a kid. I love whipped cream with fruit too, although I do like cool whip, too.

      Hi Dawn, I am so glad someone else remembers these salads. My book says 1966!! I see names in the cookbook of people I dearly loved for different reasons. Oh, the memories of these salads! Glad you stopped by, Linda
