The Best Chocolate Cookies With Andes Mint Chips Ever
Chocolate Cookies with Andes Mint chips are so yummy! Okay, I must say it was really hard for me to find a box of Andes Crème De Menthe Thins. I went to Smith’s Food King a local grocery store. The clerk said they run out of them as fast as they come in around Christmas. I said, really? Hmmmm. I have never made these cookies before. I just love peppermint so I thought I will just chop up some of the candies after unwrapping all of the green wrappers. Okay, off I go to the next store. Keep in mind, I live in Southern Utah so our store variety is limited. I am fine with that. Although we could sure use a Nordstrom’s here. I love their sales.
Okay, next I go to Rite Aid, a local pharmacy just up the street from Smith’s. No, they do not have the Andes Mint Thins either. The cute clerk said it was her second day on the job and had never heard of the Andes mints. She was so helpful, but we still could not find them there. Okay, my next stop is Target. My sister said Target sells them for sure. Yep, they have some so I pick up a few boxes. Of course, the next stop was Walmart….will they sell Andes Crème De Menthe Thin Chips? Okay, now I don’t have to chop them up into small pieces because they are chips.
Yep, I pick up one 10-ounce bag of those chips. They will be ready to stir into my chocolate cookie dough later. I do not like going to the grocery store because I might be tempted to cave in and buy something I do not want, let alone need. I guess I need to get out more because I learned about all the different kinds/flavors of chips. They even had chopped up peppermint. Not chips…I am thinking because of Christmas the variety was extensive. Love it!
This chocolate cookie recipe is my mother-in-law’s recipe. Of course with a few modifications….we all modify our recipes, that’s just what we do. This cookie is a moist, soft and chewy treat. The Andes Mint Chips make them taste just like an Andes Crème De Menthe Thins candy! Love it!
Chocolate Cookies With Andes Mint Chips
- 2 cups flour
- ½ teaspoon baking soda
- ½ teaspoon sea salt
- ½ cup baking cocoa
- ½ cup of butter softened
- ½ cup milk
- 1 cup sugar
- 1 egg
- 1 Tsp. vanilla
- 1-10- ounce package Andes Crème De Menthe Baking Chips

Place all the ingredients in a bowl except for the baking chips. I used a hand mixer to blend the cookie mixture. Fold in the baking chips.

Scoop the cookie dough onto greased cookie sheets. I use a scoop that holds 1/8 cup or two tablespoons. Two spoons will work great. Bake the cookies for about 11-12 minutes.
Shouldn’t there be a bit more liquid in this recipe? What I mixed up could not be called a dough and I had to add extra liquid just to make it workable. They did come out pretty tasty, in the end.
Kim, oh my goodness, I am so careful when I type these recipes! I just added 1/2 cup of milk I forgot to put in the recipe. What’s crazy I ALWAYS read them three times. I am so sorry! Thank you so much for telling me! I was so glad I found the chopped up Andes candies (chips). I am glad they still turned out. This recipe is the one I use for marshmallows in the center and then frost them with chocolate cream cheese frosting. Its a great cook recipe with the 1/2 cup of milk!!!! Thank you! Happy Holidays! Too funny! I added half a cup of buttermilk instead of regular milk, and like I said, they came out fine!
