Brussels Sprouts Pita Pizzas are a Pita flatbread sprinkled with olive oil, pressed garlic, sliced onions, and of course, sliced Brussels Sprouts. It is an easy dinner to make in under 20 minutes or less. You can add Mozzarella cheese or leave it off. You can add sliced fresh tomatoes, sliced zucchini or whatever sounds good to you! It has a slightly crunchy texture because the Pita bread is already baked. It is truly fabulous with the Brussels Sprouts. I would never have thought to put this combination together. Once you make these they will be a family favorite!
I am up in Salt Lake City, Utah and I am staying with my daughter, Heidi who is a fabulous cook! She and her awesome husband, Nate fix so many healthy meals together. This is one of them. Of course, I had to take pictures so we all can remember how to make them.
Step #1 Place the Pita flatbread on cookie sheets and lather with olive oil and garlic mixture.
Brussels Sprouts Pita Pizzas
- Combine the following two ingredients and set aside:
- 1/4 cup olive oil
- 3 cloves of garlic minced or pressed
- 4 Pita flatbread approximately 8 inches in diameter
- 8 washed sliced very thin Brussels Sprouts (2 per pizza)
- 1/4 of an onion sliced very thin
- Optional toppings:
- 1 cup mozzarella cheese
- 1/4 cup minced bacon
- sliced fresh tomatoes
- Seasonings: red pepper flakes and freshly ground black pepper
Preheat the oven to 425 degrees. Place the 4 Pita flatbread circles on a greased cookie sheet. Lather the Pita flatbread with a part of the olive oil/garlic mixture. Place all of the ingredients equally on each Pita flatbread. Brush the remaining garlic/olive oil mixture on the toppings. Now if you want cheese, bacon or tomatoes place them on the pizzas now. Sprinkle with red pepper flakes and freshly ground black pepper. Bake for 10-12 minutes.
