Healthy Bok Choy Salad Recipe

I don’t know how many of you love Bok Choy as much as I do, but I love it so much I have decided to create a salad using it. This is an especially great recipe to use when you have some Bok Choy going bad that you need to use. This Healthy Bok Choy Salad recipe will keep you satisfied. It’s nice to switch up your meals every now and again, and you can with this delicious recipe.

Kitchen Items Needed

When it comes to making this Bok Choy Salad recipe, there are going to be a few things that you need. Most of these kitchen items are things you probably already have. If you don’t have some of these items, it’s a wise choice to go ahead and buy them so you’ll have them for future use!

Some of these kitchen items have been in my kitchen for years. I’ve put some of the kitchen items I recommend below:

Bok Choy Salad Recipe

Gather all of your ingredients. You can see the full ingredients list in the recipe box.

Chopping Bok Choy

Chop the Bok Choy into small bite-size pieces, rinse well in a colander, and place the chopped Bok Choy in a large salad bowl.

Chopped Green Onions

Add the chopped green onions, sliced almonds, and chow mein noodles.

Bok Choy Salad Ready To Mix Together

Add the sesame seeds, if desired (optional). Thoroughly combine the ingredients. Pour the dressing over the salad, stir, and serve.

How to Make Bok Choy Salad Dressing

I used my Magic Bullet (small blender) to mix the olive oil, white vinegar, white granulated sugar, and the soy sauce. Mix or shake the dressing again right before pouring over the chopped Bok Choy Salad.

Ingredients
  • 4 Bunches Baby Bok Choy (or Two Large)
  • 1 Bunch green onions, chopped
  • 1/2 cup sliced almonds
  • 1- 16 ounce can of chow mein noodles
  • 1 tablespoon sesame seeds (optional)
Bok Choy Salad Dressing
  • 1/2 cup olive oil
  • 1/4 cup white vinegar
  • 1/3 cup white granulated sugar
  • 3 tablespoons soy sauce
Instructions

What Part of Bok Choy is Edible?

As you try and piece together your meals for the next few days, you may be wondering if all the plant Bok Choy is edible and it is! In fact, the whole plant is edible and tastes very delicious. You can eat this veggie raw or you can cook it. I like to try veggies in many different forms and I would suggest that for Bok Choy.

Is Bok Choy Healthier Than Spinach?

I wouldn’t say that one is healthier than the other. I will say that both Bok Choy and spinach bring their own healthiness to the table. You will find that Bok Choy has more Vitamin C and Vitamin A.

  1. Looks good, except I’d substitute the soy sauce maybe with Kitchen Bouquet and the sugar with Splenda or Stevia. Other wise I’m not sure anyone here can eat this due to the salt and sugar in it. Having dietary restrictions is a bummer sometimes.

    I wonder if bean sprouts or even mandarin oranges would make a nice addition. Sometimes my father puts oranges or raisins in coleslaw so it isn’t exactly the same all the time.

    1. Hi Frank, oh wow, mandarin oranges, and raisins would be a great addition! You can always substitute the ingredients, that’s why we cook from scratch. I love it! Linda

  2. Hi Linda! Great looking Bok Choy salad! I’ll have to try it soon. We use the leaves as an addition in a lettuce salad kind of like Kale. We cut the bottom thick parts up for use in chicken/turkey salad instead of using celery. And of course as per your suggestion we plant the root end to get additional greatness from it! Love free food!!!
