Have you been wanting to learn how to make your own biscuit mix as much as I have? Don’t you just love the smell of biscuits coming out of the oven? You can make them for breakfast, lunch or dinner. I have this recipe that I found in my mother’s recipe box shown below, and so I wanted to share it today. My mother was very frugal when I was growing up and made most everything from scratch. Of course, back then they didn’t have all the processed and boxed convenience foods available at the grocery stores today. I like most everything from scratch and I love homemade biscuits! How To Make Your Own Biscuit Mix

I have really wanted a biscuit mix that I could make with the ingredients I have in my refrigerator or pantry. Here’s the deal, if we had an emergency we can all make biscuits to stretch the meals we make for the entire street to go further if we had to, right? Cuisinart CTG-00-DB Dough Blender

Use two forks or a pastry blender to “cut in” the real butter! You can see me using my homemade buttermilk mix above! You can buy powdered buttermilk at your local supermarket and make the amount you need per the instructions on the box. I store my buttermilk box in the freezer and add water to make when needed. Another way to make buttermilk just use your regular milk and add vinegar or lemon juice. One cup of milk with one tablespoon of lemon juice or vinegar. That’s it!

I hope you like making these as much as I do! I think most flours would work for this recipe to make them gluten-free. I made this recipe so you can learn how to make just one batch or a BULK mixture for you to store in your pantry. With the bulk recipe, you will just add butter and buttermilk, depending on how big a batch you want to make. I love biscuits and gravy. My family loves biscuits with butter and jam. Ingredients
  • 2- 1/4 cups flour of choice I use white bread flour (or *BULK-4 times=9 cups of flour)
  • 2 Teaspoons baking powder or *BULK-4 times=8 teaspoons baking powder
  • 1 teaspoon Real Salt or *BULK-4 times=4 teaspoons Real Salt
  • 1/2 teaspoon baking soda or *BULK-4 times=2 teaspoons baking soda
  • 2 Tablespoons sugar-optional or *BULK-4 times=8 tablespoons sugar
  • 1 cup cold buttermilk or *BULK recipe instructions below
  • 1/2 cup cold butter cut into pieces or *BULK recipe instructions below
Instructions
  1. Pre-heat your oven to 425 degrees F. Grease a cookie sheet and set aside. Place all of the ingredients into a large size bowl and cut in the butter with two forks or a pastry blender. Add more flour if needed. Mound the dough into a ball and roll out about 1/2 inch thick. Cut into shapes desired. Place the biscuits onto the greased cookie sheet and bake for about 12-15 minutes. One batch makes 8 biscuits.
Recipe Notes

*BULK Instructions: Mix all the DRY ingredients in a large bowl. Store the dry ingredients in an airtight container in your pantry to keep fresh. When ready to make ONE batch of 8 biscuits: scoop out 2-1/4 cups dry mixture and cut in 1/2 cup cold butter (cut into pieces). Add one cup COLD buttermilk and mix and roll out as above. Follow baking instructions above.

  1. I have powdered butter. Do you know if it can be incorporated with the dry ingredients, and if so, the amounts? I realize it may not make the flakiest biscuits, but chances are slim actual butter will be available during a crisis anyway.

    1. Hi Stephanie, yes dry butter can be incorporated into the biscuit mix. Every company has different amounts concerning the ratio of powder versus water. Look at your container and see how much you need to make the 1/2 cup of butter proportion. I store powdered butter for baking in #10 cans, but it’s expensive. If we have a grid down we will eat those biscuits whether they are flaky or not. We will love them, right? I store powdered butter but not a lot as the shelf life is only 5 years at least for the brand THRIVE (unopened). If I run out of powdered butter I will use coconut oil because it has a longer shelf life. Yes, I will have to get used to the coconut flavor but my belly will be full.
