    I have a recipe I would like to share; Scalloped Eggplant
    1 medium eggplant, peeled and diced
    1/4 cup melted butter
    3/4 cup cracker crumbs
    1 small onion,chopped
    2 well beaten eggs
    1 101/2 oz can cream of mushroom soup
    Cook eggplant in boiling water till tender. Drain and mash, in the small bowl add the rest of the
    ingredients. Mix well. Pour in a greased baking dish. Bake at 350 for 30 minutes or till set. Enjoy
